THE PROCESS IN THE LIFE OF AN OLIVE

The olive lives a great adventure before being transformed into oil that we like to put in our salads and meals.
Its life begins when it is an olive seed. When it is planted, it grows and becomes an olive tree. Olive trees are fruit trees that come from the Mediterranean. Its texture is smooth and it can grow up to 15 or even 20 meters high.
When the olive tree gets old and the olives grow, they are harvested. They can be harvested by hand, or with a tool that allows you to pick more at a time. You can also put a net under the tree and drop the fruit with a pole.
When the bitterness is eliminated, we can decide to preserve the olives by letting them rest in a brine or oil and put them in our refrigerator. If we decide to make olive oil, we send them to be processed.
Once the olives are harvested, they are washed and sorted to keep the best ones, and a process must be done to reduce the bitter taste. To do this, they can be soaked in water or ash. The ash technique is a more Provençal practice and lasts one week.
